Also called anise hyssop or blue giant hyssop, Agastache foeniculum is traditionally valued for its anise aroma and its properties reputed to soothe digestion. This hardy perennial with mauve flowers brightens the garden while offering a generous harvest for cooking and well-being.

As a tea: To support comfortable digestion and help ease bloating and mild digestive discomfort.

Harvesting and drying

Harvest the flowering tops in midsummer, preferably mid-morning once the dew has dried. Cut the flower stems with a knife or scissors, leaving at least a third of the plant so it keeps growing.

Gather the stems in small bunches (5 to 8 stems) and tie them with string or an elastic. Hang them upside down in a dry, airy place out of direct light: an attic, a lean-to or a well-ventilated kitchen works perfectly.

Complete drying takes 10 to 15 days depending on the humidity. When the leaves and flowers crumble between your fingers, they are ready. Store them in an airtight jar away from light; they will keep for several months.

Planting and care

Plant in well-drained soil, in full sun, in soil enriched with compost. Space plants 45 cm apart. Water moderately at planting until the roots are established (3 to 4 weeks).

Once established, anise hyssop tolerates drought well. Water moderately during active growth. Cut back lightly after flowering to encourage branching. In very cold areas, mulch the base in the fall.
